Tomato Recipes

By Petrina Verma Sarkar, About.com

There's nothing to beat juicy, ripe, red tomatoes! They are traditionally used as part of the masala (spice blend) in Indian cooking but every now and then they play the leading part in a dish. Tomatoes are perfect for when you want to give a dish a tangy flavor. Here're some delicious ways to use them in your everyday cooking.

Tomato Rice

Of South Indian origin, tangy Tomato Rice makes a great one-dish meal. Serve it with poppadums.

Tomato Kadhi

Tangy, tasty and so simple to make, Tomato Kadhi goes really well with plain boiled rice. It's also full of veggies, so it's good for you too.

Roghani Kumbh

This delicious North Indian dish gets its name Rogan (meaning red) from the redness of its gravy. Don't let the color scare you though, because this is not a particularly hot dish. The red color comes from the tomatoes in the gravy!

Makkai Bharvaan Tamatar

Tangy Tomato Cucumber Salad

This salad made by my friend Mona's hubby Ben Ghosh, is so tasty I couldn't stop eating it the first time I came across it! Try it and you'll see why...

Sikkim Tomato Achaar

This fiery partner for Momos (wontons) is really easy to make. It also tastes great with plain boiled rice.

Andhra Tomato Pickle

This tangy pickle from Andhra Pradesh (in South India) is so tasty it can be eaten with just plain boiled rice! Store it in the refrigerator and it will keep for a while.
