Getting Creative With Leftovers!

Leftovers are tricky - specifically the matter of what to do with them. Either you eat them and feel like you just had same-old-same-old or they sit in your fridge till you get sick of looking at them and chuck them out. It needn’t be so though! Here’s how you can take what’s left over from your last meal, add a little something to it and pretend you cooked up a fabulous meal from scratch!

The nice bit is that when you start with leftovers, half the job is already done. I also love that there’s something you can do with pretty much any food that’s leftover.

Use leftover rice to make:

Both these dishes go really well with Kachumbar salad, Chatpata Channa Raita (chickpeas in hot-sour yoghurt) and Poppadums.

Use leftover Daal to make:

Use leftover Chapatis (Indian flatbread) to make:

You can serve these with or without a filling and jazz them up with some fiery Andhra Tomato Pickle or Mint-Coriander Chutney!

Use leftover Idlis to make:

Serve this oh-so-easy-to-make dish with Sambar and Coconut Chutney (south Indian).

Use leftover mixed veggies to make:

Serve them hot with Tamarind Chutney and Mint-Coriander Chutney.

Use leftover minced meat to make:

Use leftover meat curry (lamb or beef) to make:
