Pyaaz-Tamaatar Ka Omelette (onion-tomato omlette)

Try this omlette with an Indian twist, for breakfast. It's a delicious way to start your day.

Ingredients:

  • 2 tbsps butter
  • 1 large onion chopped very fine
  • 1 large tomato chopped very fine
  • 1 green chilli chopped very fine
  • 1/4 tsp ginger paste
  • 1/4 tsp garlic paste
  • 1/4 tsp red chilli powder (optional)
  • 4 eggs
  • Salt to taste

Preparation:

  • Melt the butter in a heavy-bottomed pan and add the onion. Fry till soft.
  • Add the tomato and fry till soft. Add the green chilli, ginger, garlic pastes and red chilli powder (if using) and fry for a minute.
  • Whisk the eggs well in a separate bowl and add to the onion-tomato mixture. Season with salt, mix well and spread to form a thick layer in the pan.
  • Cover, simmer and cook till the egg is set.
  • Cut into pizza-like wedges and serve hot with parathas (pan-fried Indian flatbread).
