Ben & Mona's Tangy Grapefruit Salad

This salad is not just delicious it's a great way to get your Vitamin C!!! My friend Mona gave me the recipe and says she ate masses of it while pregnant with her second baby. That had to be good for him!

Ingredients:

  • 1 large grapefruit
  • 1 large sweet orange or mandarin or sweet lime
  • 1 tsp lemon juice
  • 1 tsp mustard oil
  • 2/3 tsp sugar
  • Salt to taste
  • 1 green chilli chopped very fine
  • 2 tbsps chopped fresh coriander

Preparation:

  • Peel and segment the grapefruit and orange. Keep inner skin on if desired... it's actually good for you! Cut each segment into 2 pieces.
  • Mix the lemon juice, mustard oil, salt, sugar together in a small bottle (with screw-top lid), put the lid on and shake till blended.
  • Put fruits, green chilli, chopped coriander into a large bowl. Add the above dressing and toss till fruits are fully coated. Serve immediately.
