Degchi

By , About.com Guide

Definition: A Degchi is one of the most commonly used utensils in an Indian kitchen. Basically a deep, round saucepan without handles, it is used to cook curries, stir-fry vegetables, boil rice and make rice dishes like Biryani. A Degchi is usually made from stainless steel, aluminium or brass and has a thick bottom to prevent food from burning and to ensure even distribution of heat while cooking. These days it is also available in non-stick coated versions! A Degchi usually has a wide lip/ rim around its top edge to make it easy to carry and also to help pour things from it without spilling them.
Pronunciation: day-g-chee
Also Known As: pateela, tapeli, pateeli, batloi
Alternate Spellings: deygchee
