Delicious chilli potatoes is an Indian adaptation of a Chinese recipe. It makes for a terrific snack or side dish. Chilli potatoes are so easy to make, once you learn how to cook it, you'll be tempted to throw it together every chance you get.

Ingredients

  • 1 pound frozen french fries

  • 3 tablespoons vegetable oil, or canola or sunflower cooking oil

  • 2 large onions, sliced thinly

  • 5 to 6 cloves garlic, chopped very finely

  • 1 medium bunch spring onions, chopped coarsely

  • 3 tablespoons ketchup

  • 1 tablespoon chili sauce

  • 2 tablespoons soy sauce

  • 1 teaspoon vinegar

  • 1 cup chicken stock cube

  • 2 green bell peppers, chopped, optional

  • Kosher salt, to taste

  • 1 teaspoon toasted sesame seeds, for garnish

Steps to Make It

  1. Gather the ingredients.

  2. Deep-fry or oven bake french fries until golden brown and crispy.

  3. To make sauce, heat oil in a wok or deep pan on a medium to high heat.

  4. Now add onion, garlic, and spring onion (reserving some for garnish) and cook until soft.

  5. Add ketchup, chili sauce, soy sauce, vinegar, and chicken stock cube; cook for another 2 minutes, stirring continuously.

  6. Now add french fries and green bell peppers (if using). Mix well and check for salt. Season if required. Cook for 30 seconds more. This dish should have almost no gravy, just a coating sauce. If it is too dry, add 1/4 cup of water and mix well.

  7. Turn off heat and spoon chilli potatoes onto a serving platter. Garnish with some chopped spring onion and toasted sesame seeds.
