Chicken Tikka Sandwich

This may be the ultimate lunch. Not only is chicken tikka delicious the day you make it, if you're lucky to have some leftover the next day, make it into a sandwich.

If you're unfamiliar, chicken tikka is typically marinated in yogurt before being grilled or roasted. It is sometimes served with a rich tomato sauce and called chicken tikka masala. That dish is often served with rice and naan, but since you'll be eating just chicken tikka on a sandwich, you're all set.

Ingredients

  • 1 large onion, sliced into thin rings

  • 1 lime, juiced

  • 1 teaspoon chaat masala, available at most Indian grocery stores

  • 4 slices sandwich bread

  • 2 tablespoons unsalted butter

  • 4 to 5 tablespoons mint-coriander chutney

  • 12 ounces leftover chicken tikka

Steps to Make It

  1. Gather the ingredients.

  2. Put onion rings in a bowl and squeeze lime juice over them. Now sprinkle chaat masala over and mix well so onions are fully coated.

  3. Lay slices of bread on a clean cutting board and butter. Now spread a generous layer of mint-coriander chutney on the bread.

  4. Chop chicken tikka into slices and lay on bread to cover the entire surface of 2 of the slices.

  5. Now add onion as per preference, on top of chicken.

  6. Cover with another slice of bread.

  7. Trim edges if preferred, cut in half, and serve.
