Pack a Great Lunch Box

My son has recently started pre-school! It's lovely to have entered this new phase of our lives but as with all other changes this one comes with its tough bits. Anyone who knows me, knows that my pet peeve is planning meals!!!! I often call my husband at work (!) to ask him what I should cook! So as you can imagine, thinking up tasty and healthy lunch box options is hard work!
Thank goodness therefore, for Indian-style sandwiches! When I make them, I try my best to pack as much of a nutritional punch as I can. Give the old peanut butter and jelly the ditch - with fillings ranging from fresh veggies to cottage cheese, jazzed up with pickles and chutneys, my sandwiches are both filling and tasty. If like me you're struggling for interesting lunch box ideas, you've got to give them a go.
