Chicken Curry is made differently in different parts of India. In the North, for Chicken Tikka Masala, chunks of chicken are marinated in a special sauce, then grilled and cooked in another unique sauce. In south India, Chettinad Chicken is cooked with traditional southern ingredients like fennel and curry leaves.
I ate Maharashtrian Chicken Curry (pictured at right) for the first time recently and loved it! It is made, in true Maharashtrian style, with grated coconut and coconut milk. Serve it with plain boiled rice and a green salad or a simple vegetarian dish for a tasty meal!
