An Anglo-Indian Christmas Feast!

Christmas CollageAnglo-Indian food is the delicious result of the British Raj in India. Indian Khansamas (cooks) took aspects of British cuisine and amalgamated them with Indian methods of cooking, spices and ingredients and the result was Anglo-Indian Cuisine! There are soups tempered with cumin and red chillies, roasts cooked in whole spices like cloves, pepper and cinnamon, rissoles and croquettes flavored with turmeric and garam masala.... Over the years though, Anglo-Indian cooking has become more Indian than British.

A typical Anglo-Indian Christmas will see the table loaded with meat, egg and poultry dishes of various kinds. Vegetables are usually conspicuous by their absence! There is of course, always the customary huge bowl of green salad...if only to assuage one's guilt.

Celebrate Christmas Anglo-Indian style this year and cook your family a feast! Here are just a few delicious options:
